What Do They Eat?


There are many species of sturgeon, all with their own somewhat localized diets. The Acipenser family generally follows a similar diet, however. They are mostly bottomfeeders, and their favorite snacks are crustaceans, worms, molluscs, and small fish.

Sturgeon have a special kind of mouth called a protrusible mouth. Protrusible means 'able to be extended.' As the name suggests, sturgeon can extend their mouths to catch prey. The rapid extension of the jaw creates a vacuum that sucks in unsuspecting prey creatures. Sturgeon do not have teeth, however, so their diet is limited to whatever they can fit in their mouths. This means, for anyone who was worried about it, that people are not on the menu.
